Do you speak up?
If someone or even more than one person is saying things you disagree with, do you speak up? Does it depend on what they are talking about?

Depends on who it is and what it is.
Depends on a lot of things. Is it someone I'm close to or just someone random or someone I'm just an acquaintance with? What is the context of the statement/disagreement? was it just an offhand remark or said to be intentionally offensive? What the location/context is. Is it in a home, out in public, in a group setting or one to one? Is the statement made due to ignorance, bigotry, or just to stir shit up? The subject also applies. Is it a parenting comment, a political view, a religious view, something said against or about another person? Is there anything to be gained by speaking up? Will anyone be educated, offended, angry, understanding etc?

Depends on what it is. If it's something that just doesn't matter, no. If it's something harm or morally wrong, yes.
