My hound dog barely sheds, but he’s stubborn as hell.

The answer is always a boxer.

Well let's see .....
Bassethound
Dachshund or Mini Dachshund
Ehrlich Bulldog
French Bulldog
Greyhound
Mastiff (too big?)
Pug
Redbone Coon hound or any Coon hound
Whippet

There's a short list for you.
May I ask what you didn't like about the Rottweiler? I find mine just about perfect and I've owned lived with many different dogs.

DD has a dachshund/beagle mix who is about 30 lbs and she's the best. Small but big enough to really play around with. My mom and I are both in love with her and if I do another dog after my pit and lab/pit mix pass, I'm considering one. My mom already said that will be her next dog.

As a fellow Shepherd owner, I feel your pain! I have always liked English Springer Spainels and Brittany Spainels. I wouldn't mind a Greyhound either.

Our Catahoula (mix, possibly) is extremely smart. She adores children and wants nothing more than to spend he days surrounded by 'her people'. I could write a book singing her praises. Lol she barely sheds and only requires a bath when she decides to romp around in mud outside.
