No Easter dinner here, but my planned Passover Seder menu is:
- Mexican guefilte fish (a la Veracruzana) cooked in a tomato sauce with red pepper, pickled peppers, and olives.
- Matzo ball soup with shmaltz caramelizad onions
- Balsamic brisket
- Sweet and sour chicken
- Roasted garlic potatoes with herbs
- Roasted asparagus with almonds
- Tzimmes (sweet roasted carrots with sweet potato and prunes)
- Herb and lemon quinoa
- Flourless chocolate cake
- Macaroons

We are having spiral ham with homemade scalloped potatoes, ham stuffing, peas and peaches and cream corn.

Ham, turkey, stuffing, macaroni salad, Caesar salad, some sort of veggies, mashed potatoes and gravy and then also a fruit and veggie tray to munch on beforehand. And I don't know what my sister will bring for dessert..

Ham, asparagus, a few deviled eggs for Dh and the kids ( yuck!), and scalloped potatoes. I will probably make an angel food cake or pound cake depending on my mood this weekend. We'll see what else I decide on in the way of vegetables.
