My son just loves this. He usually grabs a piece when he gets home or on this way to hockey as a quick bite.
Strawberry-Chocolate Greek Yogurt Bark
3 cups of whole-milk plain Greek Yogurt (can use reduced fat but will not be as creamy tasting)
1/4 cup pure maple syrup or honey
1 teaspoon vanilla extract
1-1/2 cups sliced strawberries (fresh or frozen)
1/4 cup mini chocolate chips
Line a rimmed baking sheet with parchment paper
Stir yogurt. maple syrup/honey, and vanilla in a medium bowl. Spread on the baking sheet lined with parchment paper (10" x 15").
Scatter the strawberries on top and sprinkle with chocolate chips
Freeze until very firm (about 3 to 4 hours). Break apart to serve
To store keep in freezer after being broken apart in freezer bags or between parchment paper. Will keep up to 1 month, let stand at room temperature for 15 minutes before serving.
